I have not seen any mentions of baleen used as handles for knives. The examples I've seen were used in corset busks, but a busk is a lot thinner than a knife handle, and looks different; the busks I've seen don't have the shine of the handle of your knife. If I didn't know better, I'd call it horn, but now I'm curious.
